Time Saving Week Night Recipe: Garlic Butter And Spinach Pasta.

Time is really my own enemy. I have always been horrible at time management but I have to admit since this kiddo came along, I am learning to be more organized. Kind of sort of.

If someone was to ask me what is the hardest thing about motherhood I would tell them to schedule an appointment with me and bring the wine.

Uh, I mean coffee from Starbucks.  It’s going to be a loooooong conversation. 🙂

If I have to pick one and only one, then it is trying to cook while having a toddler around. I mean it’s SO hard!  Like really, she just HAS to squeeze herself between me and the stove. She doesn’t want my attention away from her whatsoever.

Plus the fact that I spend my entire day at the office doesn’t help much either. I rush through the crazy Chicago commute and don’t get home until close to 5pm, sometimes even 6pm.

I recently found a pasta recipe that I have not only once, twice, but made FOUR times already since I have discovered the recipe on Kate’s food blog Diethood!

If you are in a pinch for time and you are trying to feed a family, this recipe is for you. I usually double the recipe because this way, I can take some to work for lunch the next day. I have also made this with garlic powder in the past when I thought I had real garlic in the pantry but I actually didn’t.

The hubs loves it, the kiddo loves it. I love it. This is a fail proof recipe for the whole family. And VERY easy to put together in very little time. I like that. A lot.

And it has garlic butter in it. What is not to love? Garlic butter makes everything better in my opinion! Probably one of my favorite combinations.
