Oven Baked Feta Fries.

Happy Good Friday!

Easter is my favorite holiday actually, I love it even more than Christmas and Halloween.

Something about Easter that makes me cheerful-maybe it’s because it happens around Springtime, when the snow is gone and the weather starts to warm up. A time to rejuvenate and wake up after the long slumber of winter. Although this year, that was not the case-we had SNOW this past week-insane! But I hear it is going to be close to 70 degrees by Sunday. I already know what the kiddo and me are going to wear to church. I love dressing my doll up. I got my Easter eggs all dyed yesterday and ready to go 🙂

I recently was craving feta fries and thought I’d share this recipe with you all-it’s super easy and REALLY good! I got the idea awhile ago from the feta fries that they sell at the all night Gyro eateries here in Chicago’s Greektown neighborhood. When I was single and in my 20s, this would be the very last stop before we headed home after the clubs. I didn’t care much for the gyros, but the feta fries were a MUST! It definitely is hangover food. I thought to myself this would be very easy to put together at home.

Oven Baked Feta Fries:

2-3 Large Idaho potatoes, peeled and washed

1 Slice of feta cheese, crumbled, about 1-2 inch thick

1 Lemon

1tsp Oregano

Salt and Pepper to taste

Vegetable oil,enough to cover baking sheet



1. Preheat oven to 420F

2.  Slice the potatoes 1-2 inch thick

3. Pour vegetable oil on a large baking sheet, enough to cover the pan

4. Place fries on pan and spread them throughout

5. Bake for about 20-30 minutes or until golden brown, turning them once.

6. Once done, place fries on a plate with paper towel and squeeze lemon juice onto the fries.

7. Sprinkle oregano, salt and pepper.

8. Top with crumbled feta cheese.


You can substitute basil for oregano, and tweak the amount of the ingredients to your desire. Enjoy!

      OH yea totally try it! I tend to put feta on everything though lol.
